Syrups, Syrups, Syrups — Build These and Never Buy Simple Again

Most bartenders reach for a bottle. We reach for a saucepan. Syrups aren't just sweeteners — they're structure. They control balance, texture, and how a drink evolves from first sip to last dilution. This episode we're making three from scratch.

What we're building:

  • 🥭 Mango Thyme — Bright tropical fruit upfront, herbal finish, acid backbone from malic and citric. Lush fruit meets savory garden. Built with mango Calpico, fresh thyme, and a precision acid blend.

  • 🍓 Raspberry — Fresh, tart, slightly jammy. Classic 1:1:1 build — equal parts raspberries, water, and sugar. Real fruit weight, no shortcuts.

  • 🌰 Pistachio — Nutty, rich, marzipan-adjacent but more elegant. Blended raw pistachios, double-strained, slow-heated. Built for coffee cocktails and dessert builds.

The Rules That Apply to All Three:

Low heat only. Never boil. Fine strain everything. Taste as you go.

  • 🥭 Mango Thyme: 300g mango Calpico | 120g sugar | 8–10g fresh thyme | 2g malic acid | 1g citric acid — steep 10–15 min, no boil, fine strain.

  • 🍓 Raspberry: 16oz raspberries | 16oz water | 16oz sugar — gentle simmer 15–20 min, strain solids, add sugar while warm.

  • 🌰 Pistachio: 200g raw pistachios | 400g water | 300g sugar — lightly toast, blend, heat gently, double strain, dissolve sugar.
