Lychee Mezcal MArGarita

A half-empty bottle of lychee syrup was dying a slow death in my fridge door — so I put it in the ring with smoky mezcal and let it fight back. Turns out flowers can beat fire. This is what happens when you refuse to waste two ounces of anything.

Ingredients:

2 oz mezcal

.75 oz fresh lime juice

.75 oz lychee syrup

.25 oz agave

pinch of salt

Instructions

1. Add mezcal, lime juice, lychee syrup, agave, and a pinch of salt to a shaker tin.

2. Shake hard with ice — this one needs the extra dilution to soften the mezcal’s edges.

3. Double strain over fresh ice.

4. Garnish with a lime wheel and serve.
